Stacy Keibler, with her long frame, classic beauty and enviable dating history, might seem totally at home on the red carpet. But this Baltimore native is actually most focused on her friends, family and relishing prized moments of calm.
“it changed my Life,”
Stacy Keibler declares. No, she’s not talking about hosting Lifetime’s latest competitive cooking show, Supermarket Superstar; her two years dating George Clooney, aka America’s Favorite Human, or even falling for her new beau, Jared Pobre, the handsome CEO of the alternative media company Future Ads. She’s referring to a 21-day cleanse she tried last fall, based on the book Clean by Alejandro Junger, M.D. “I cut out night-shade vegetables, like eggplants and tomatoes, and didn’t eat any dairy or gluten. I saw the difference in my body, my energy and my mental clarity. Even the whites of my eyes were clearer,” says the 34-year old former WWE wrestler. “I’ve always been healthy, but this began a full health journey for me.” Just of a whirlwind few days that included Paris Fashion Week and a full-blown birthday extravaganza Pobre threw for her back home in Los Angeles, the down-to-earth glamazon took some time to talk to Natural Health about her wholesome habits, her business ventures and the role of love and dancing in her happy life.
Natural Health: we’ve been following you on Instagram, and it looks like, with all your recent
travels, you’ve been having a lot of fun!
Stacy Keibler: yes! But you know what? i’m blessed: i always have fun!
NH: you seem to get a lot done, too. you launched a sportswear line in September with mesh & mia, and now you’re developing a line of healthy packaged food as well, right?
Stacy Keibler: i’ve been developing it for a while— i just keep modifying what i want to do.
the main goal is to make convenient, healthy food for people 2 to 92. i’ve learned so much by researching what foods cause inflammation; i want to take those foods out but give people such good things to eat, they don’t even realize what’s missing.
NH: if someone asks you what she can do to change her diet, what do you say?
Stacy Keibler:: if you’re just starting, i say eliminate dairy and wheat. a lot of people who thought their external environment was the cause of their allergies see their symptoms go away when those foods are cut out. you can really get a sense of clarity and may reduce inflammation in your system.
NH: what dairy substitute do you like?
Stacy Keibler: i don’t eat soy, so i use coconut milk or almond milk. i’m not a coffee drinker either— instead, i start the day with hot water and lemon. it’s very cleansing and healing and gets everything moving. and so inexpensive and simple!
NH: Some people think that eating healthy is too pricey.
Stacy Keibler: you’re either going to pay at the grocery store or at the doctor!
NH: So true! after the hot water and lemon, what’s a typical day of eating like for you?
Stacy Keibler: i start with a smoothie or fresh juice. i like greens with lemon and ginger. it’s like wine: an acquired taste! if you have a hard time at first, including beets or carrots can help, but that’s
usually too sweet for me.
NH: good tip. what next?
Stacy Keibler: around lunchtime, i’ll have a salad with organic chicken and vegetables with really, really great olive oil, lemon wedges and salt and pepper.
NH: please tell me you still drink wine.
Stacy Keibler: definitely! i’m a Libra; i’m all about balance. i love a glass of pinot noir. if i’m going to have a cocktail, it’ll be vodka with water and lemon so i can hydrate as i drink. when i’m detoxing, i follow the rules to a t. But i can’t constantly be strict when i’m traveling around the world every week!
NH: definitely not. do you snack?
Stacy Keibler: yes! i have a dehydrator, which i use to make kale chips. also, nuts are a go-to snack for me— i’ve never met a nut i didn’t like. when i’m craving something sweet, i’ll make a dairy-free, gluten-free chocolate pudding that is so good! [recipe below]
NH: you have such a crazy schedule—how do you squeeze in fitness?
Stacy Keibler: it’s a stress reliever, so i always ft it in, whether that means waking up early or staying up late. But i like to do it first thing. i take exercise DVDs with me when i travel, so even with just a little space in a hotel room, i can work out. But when i can, i exercise outside. i love to run along the beach in Santa monica—the water really inspires me. When i have beautiful scenery in front of me, i feel like i can run forever. i also spin at Soulcycle and do Barry’s Bootcamp and Tracy anderson’s workouts. i do a little bit of everything, because changing it up challenges different muscles and keeps me excited about working out.
NH: do you also practice meditation?
Stacy Keibler: definitely. the best part of my day, even if it’s only five minutes, is to just sit there and meditate. it’s the only time i have to give my mind a break.
NH: has that been helpful when you’ve gone through rough patches?
Stacy Keibler: yes. i’m a mind-over-matter person. When things seem like they’re going wrong, you have to remember that anything that’s happening this minute is going to seem like a dream in a day or a week or a year. So you have to try to live in the present moment. working out and meditating keep me focused and take my mind of whatever is going on.
NH: did meditation come naturally to you?
Stacy Keibler: no, it was something i had to work on. if you want to get started, find a guided meditation track for your ipod. having someone else’s words guiding you through helps you learn to take those minutes to yourself and just relax. then, you get better and better at it and realize you can do it on your own whenever you want.
NH: what else keeps you feeling good?
Stacy Keibler:: having supportive, loving people around is really healthy, so i put 150 percent into my relationships. i’m so lucky and blessed with the friends and family i have, because they all have strong fundamental values. they’re loyal and trustworthy, and they love me as much as i love them. they keep me grounded. when i go back home, they tell me i’m the same person i always was.
NH: Judging from your Instagram feed, you had a really powerful experience at Burning man
Stacy Keibler: words cannot explain how amazing it is. there’s so much spirituality, art and community
and no judgment, ego, money, phones or computers.
when you’re stripped of all those things, you can feel what’s really important in life. one of the biggest problems in our world is people’s egos. To go to a place with no ego is magical.
NH: any other essentials?
Stacy Keibler: i swear by laughing and dancing. i can’t think of a day when i haven’t laughed or danced.
NH: and romance? you looked pretty happy in some recent pictures with a very handsome man!
Stacy Keibler: all you need is love! i have never been happier in my life.

1 ripe avocado
¼ cup cacao powder
¼ cup almond milk
1 Tsp vanilla extract
1 Tsp coconut oil
1 tbs coconut butter
2 full droppers of chocolate stevia
2 Tsp xylitol
Mix all the ingredients together in a blender. Add additional drops of chocolate stevia to taste. Chill for at least 30 minutes, then top with coconut, berries, nuts, granola, almond butter—whatever you’d like
